6 to 8 Medium Sized Potatoes
6 to 8 Slices of Bacon
1 Medium Sweet Onion - Chopped
Cider Vinegar to Taste - About 5 to 6 tbsp.
Salt and Pepper to Taste

Directions:
Directions:
Boil potatoes (cut in half) until tender. Slice and keep warm. Cut bacon into 1/2" to 1" pieces and saute until barely crisp. Drain on paper towel. Saute onion in bacon fat until glassy.

Gently mix potato, bacon and onion. Drizzle small amount of bacon fat and mix (you don't want it too greasy so add a small amount and mix, add more if desired).

Drizzle vinegar over mixture and taste, add more if desired. Add salt and pepper and mix carefully so as not to chop up potatoes. Serve warm.
