2 cups soft coconut macaroon cookie crum
1 cup sugar
(prepared from about 8 soft macaroon cookies)
2 Tbsp. Butter or margarine, melted
1 tsp vanilla
4 pkg. (8oz each) Philadelphia cream cheese, softened
4 eggs
2 cups sliced strawberries (or fruit of choice)

Mix crumbs and butter. Press onto bottom of 9-inch spring form pan.
Mix cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Pour over crust.
Bake at 350 for 55 to 60 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan Refrigerate 4 hours or overnight. Top with strawberries.
