4 Chicken Breats
2 slices provalone cheese
Fresh baby spinach
Romesco sauce
Salt & Pepper

Directions:

Carefully slice a pocket into the side of each breast using a sharp knife. Fill pocket with a few spinach leaves and half a slice of cheese. Place stuffed breast on a cookie sheet. Season with salt and pepper and top with a heaping tablespoon of Romesco sauce. (You can buy this sauce ready made at any good grocery store) Repeat until all breasts are stuffed and topped. Bake at 400 F for 40 minutes or until chicken reaches an internal temperature of 165F.
