2 lbs. red snapper fillets
1/3 c. olive oil
1 chopped onion
1 14 1/2 oz. can whole tomatoes
1 4oz. can chopped pimentos
2 T. capers
1 3oz. jar green olives
1/2 t. salt
fresh ground pepper

Directions:
Directions:
Preheat oven to 350º. Butter 9 /13 baking dish. Saute onions in oil. Add chopped tomatoes, salt and pepper, and cook 2 minutes. Place fish in baking dish. Add pimentos, capers, and olives. Pour tomato and onion mixture over it. Bake for 25-30 minutes.
