1/2 cup sherry or white wine
1/4 cup vegetable oil
1/4 cup soy sauce
1/2 teaspoon ground ginger
1 clove garlic, minced
1/2 pound fresh scallops
8 fresh mushrooms
1 onion, cut into chunks
8 cherry tomatoes
1 yellow bell pepper, seeded and cut into 8 chunks
1 pound fresh shrimp, peeled and deveined
3 cups cooked rice

Combine sherry, oil, soy sauce, ginger, and garlic in small bowl. Pour all but 1/4 cup marinade into a plastic bag. Add shrimp and scallops. Marinate 1 hour in
refrigerator. Prepare grill, Drain shrimp and scallops. Thread shrimp and scallops alternately on skewers with mushrooms, onion tomatoes, and bell pepper. Grill 8 to 10 minutes, turning and basting frequently with reserved 1/4 cup marinade. Serve over rice.
