2 t. olive oil
3/4 c. chopped onion
3/4 c. peeled and chopped carrot
3/4 c. chopped celery
1 t. minced fresh garlic
2 c. cooked cannellini beans
1/2 t. each chopped fresh sage, rosemary and oregano
2 t. grated lemon peel
1 c. chicken stock
3/4 t. salt
1/4 t. black pepper
2 T. freshly grated Parmesan cheese

Directions:
Directions:
In a large sauté pan, sauté onions, carrots and celery in olive oil for 2 minutes. Add garlic, and sauté for 1 minute more. Lightly stir in beans, herbs, lemon peel, chicken stock, salt and pepper. Let simmer until stock is reduced by half, about 10 to 15 min. Finish by stirring in Parmesan cheese.
