1 pound boneless, skinless chicken breast, (can also use shrimp or lean beef)
Peanut Sauce

MARINADE:
1 tablespoon mild curry powder
1 tablespoon sugar
1/4 cup reduced-sodium soy sauce
3 tablespoons peanut or canola oil
2 cloves garlic, minced

Directions:
Directions:
1. Cut chicken or lean beef into small, skewer-sized pieces.

2. Mix marinade ingredients in a medium-sized bowl.

3. Place chicken, shrimp or meat in marinade and refrigerate for 15 minutes to 2 hours.

4. Thread chicken, shrimp or meat onto bamboo skewers. Place on a lightly greased grill or in a baking pan in a pre-heated 375º oven until done (approximately 20 minutes).

5. Serve over rice with peanut sauce (or garnish with diced peanuts) and vegetables.
