Empanada dough:
3 pkg. (3oz) soft cream cheese
1/2 c. soft butter
1 1/2 c. unsifted flour

Filling:
2 T. butter
1/2 c. finely chopped onion
1/4 c. finely chopped blanched almonds
1 pkg. 3 oz. cream cheese
1 can tuna (6 oz) drained
1/2 t. thyme
1/2 t. salt
1/8 t. pepper
1 egg
1 T. water

Directions:
Directions:
Mix dough and roll out and cut into round shapes. Saute butter, onion, and almonds. Cool and then add cream cheese, tuna, thyme, salt, and pepper. Fill empanadas with filling and seal with a fork. Mix 1 egg with 1 T. water and brush this as a glaze. Bake at 350º for about 20 minutes or until brown. Time has to be monitored.
