1 Ham Bone With Lean Meat - Trim Off Fat
1 lb. Package Dried Peas
3 Quarts Liquid ( 1/2 water and 1/2 chicken broth)
1 Large Onion - Chopped
1 1/2 c. Carrots - Thinly Sliced
1 c. Celery - Chopped
1 Bay Leaf
Salt and Pepper to Taste

Wash and sort peas well.

Trim meat off bone and cut into cubes then add ham, ham bone and all ingredients to soup kettle.

Simmer until peas are mushy, about two (2) hours.

When soup is half way done, test for salt but be careful as some ham is quite salty. If more salt is needed, add now along with 1/4 to 1/2 tsp. pepper to taste.

If you want soup thicker, leave cover off until desired thickness.

If you do not have chicken broth, two (2) chicken bouillon cubes can be added with the water.
