5 slices bacon, sliced
1/4 c. chopped onion
1/4 c. chopped carrots
1/2 c. sliced mushrooms
1/2 c. Green peppers, diced (or peas)
1/2 c. chopped water chestnuts
3 to 4 c. cooked rice

Directions:
Directions:
Fry bacon until crisp. Remove and drain. Pour off all but 2 tbsp. of drippings. In a large skillet cook in drippings, carrots, onions, green peppers, mushrooms, and water chestnuts until tender, approximately 3 to 5 min. Stir rice int9o vegetables and simmer an additional 2 to 3 min. Additional items may be added to suit taste.
