Ingredients:  
3 c. flour
1 1/2 c. shortening
7 1/2 tbsp. cold water
1 1/2 tbsp. lemon juice
3/4 tsp. salt
1 egg
1 egg yolk
Combine flour, salt, and shortening. Beat together remaining ingredients and add to flour mixture. As this is a very soft dough, it must be chilled.

Filling:
1 1/2 c. sugar
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
5 1/2 tbsp. flour
3 tbsp. tapioca
3/4 tsp. salt
10 to 12 medium apples
Mix all ingredients together. Roll 1/2 of dough onto a jelly roll pan. Pour filling into pan and top with other half of dough. Bake at 375 degrees for 30 min.

Topping:
2 tbsp. soft butter
1 1/2 c. powdered sugar
1 tsp. vanilla
1 tbsp. milk
Mix well and spread on warm pie.
