1 (8 oz.) can pineapple chunks in juice, undrained
3 c. pineapple juice
1/2 c. cream of coconut
1/3 c. dark rum
2 tbsp. fresh lemon juice
1 tsp. coconut extract
Mint sprigs

Directions:
Directions:
Place pineapple chunks with juice in a blender and process until smooth. Combine the pineapple puree, pineapple juice, cream of coconut, dark run, lemon juice and coconut extract in a large bowl. Pour mixture into a 9 x 13 in. baking dish; cover and freeze at least 8 hours or until firm. Remove the frozen pineapple mixture from the freezer. Scrape the entire mixture with a fork until fluffy. Spoon the mixture into a freezer safe container; cover and freeze up to 1 month. When ready to serve, garnish with mint sprigs.
