Rhubarb Nut Bread Recipe

1 1/2 c. brown sugar
2/3 c. oil
1 egg
2 3/4 c. flour
1 tsp soda
1 tsp salt
1 c.*sour milk
1 tsp vanilla
1 1/2 c. diced rhubarb
1/2 c. chopped nuts
Topping:
1/2 c sugar
1 T. margarine or butter
1/2 tsp. cinnamon or more for taste

*1 c. sour milk = 1 c. milk and 1 T. vinegar

Chop rhubarb into very small pieces. Chop nuts. Mix together flour, brown sugar and salt. Set aside dry ingredients. Blend together oil, egg and vanilla. Add sour milk. Stir in rhubarb and chopped nuts. Add dry ingredients to wet ingredients and stir.
*Prepare loaf pan by coating with either shortening and flour or use Pam non-stick spray.
Topping:
Mix together sugar, margarine (or butter), and cinnamon until mixture crumbles. Sprinkle topping on top of mixture in loaf pan.
Bake 45 minutes
