RICE PUDDING

1/2 cup rice
1 cup water
4 cups milk
1/2 stick margarine
1/2 tsp. salt
2 eggs
1/2 cup sugar
1/2 cup raisins
1/2 tsp. vanilla

Directions:
Directions:
Bring barely to a boil, the rice, water, milk, margarine and salt. Then turn down heat to simmer. Cook 1 hour or until rice is done, stirring occasionally. Mix eggs, sugar, raisins and vanilla. Pour slowly into rice mixture and stir until mixture thickens. Pour into individual bowls and sprinkle with cinnamon sugar (if desired). This is good warm or cold.

This recipe is very familiar to me as Mom made this one quite often when we were growing up in Minnesota. Tasty, filling and economical what more could you ask for? Thank you!
