1 1/2 c. sugar
1/2 c. margarine
1 tsp. vanilla
3 c. rhubarb (cut fine)
1 egg
1 c. buttermilk
2 c. flour
1 tsp. soda

Directions:
Directions:
350º
Cream margarine and sugar. Add egg and vanilla. Add milk, flour and soda. Blend throughly. Fold in rhubarb. Spread in rectangle cake pan.
*Sprinkle 1/3 c.sugar and 1 tsp. cinnamon on top.
Bake 350 degrees for 40-45 minutes

Another great rhubarb recipe! I wish Aunt Lucille was here to make it and invite us over for coffee and desert. My mother, Arlene Dahl (Lucille's sister) misses the letters she received from her almost daily. Aunt Lucille would clip newspaper clippings out of the Roseau Times and send them to mom which consisted of obituaries, news events of people mom knew, or Jeff Olsen's column which would always make her laugh and a hand written note from her in each envelope. Mom said for the longest time she would go to the mailbox and expect her newsletter and clippings. It has been a very hard thing for her to get over her big sister's death.
