1 cup butter-softened
2 cups sugar
1 cup cold mashed potatoes
1 tsp. vanilla
2 cups flour
1/4 c. cocoa
1 tsp. baking soda
1 cup milk

Directions:
Directions:
350º
Cream butter and sugar. Add eggs, beat well. Blend in potatoes and vanilla. Combine flour, cocoa and soda. Add along with milk and stir well.
Pour into 13" x 9" pan. Bake at 350 degrees for 40-45 minutes or until cake tests done.

Mama usually baked this the day after she made a meal which included mashed potatoes because there was always a dab left and she hated to throw anything. The potatoes make it wonderfully moist!
