3 egg whites
6 tbs. sugar
2 c. scalded milk
3 egg yolks
1/4 c. sugar
1/8 tsp. salt
1/2 tsp. vanilla

Directions:
Directions:
Beat the 3 egg whites until stiff; fold in 6 tbs. sugar and drop from a tablespoon into 2 cups of scalded milk. Cook for about 5 minutes or until firm. Lift out carefully. Use the milk custard as follows: Combine the three egg yolks, 1/4 cup sugar, salt and stir gradually into the hot milk (2 cups). Cook over hot (not boiling) water until custard coats the spoon, stirring constantly. Add vanilla extract and chill rapidly. To serve, pour cold custard into serving dish. Top with floating islands and sprinkle with nutmeg.
