Directions:1. Preheat oven to 350º. Line base and sides of a standard jelly roll pan with parchment paper. Do not spray with vegetable oil. Sprinkle a clean tea towel with a dusting of the powdered sugar.
2. Whip eggs and sugar together for about three minutes. Beat until a ribbon of batter sits on the surface for about 10 seconds. Beat in vanilla.
3. Sift flour, baking powder and salt together and fold gently into the egg mixture until combined.
4. Spoon mixture into the jelly roll pan and spread it until it is smooth. Bake until light brown about 13 -16 minutes. Immediately turn it over onto the tea towel, remove parchment paper and roll cake up. Let rest until the roll cools down. Manjar over the cake. To decorate, sprinkle powdered sugar on top.
6. Manjar or dulce de leche is available in jars at gourmet shops. Otherwise you can make it by this method: 1 can condensed milk
Place unopened can in a deep saucepan and cover completely with water. Boil for 2 hours, being careful to always keep the can covered with water. Drain and cool the can before opening. |
