1 Cup cooked rice, cold
1/2 Cup sugar
1 1/2 Cups crushed pineapple, drained
1/2 teaspoon vanilla
Cool-Whip
Miniature marshmallows
Maraschino cherries, optional garnish.

Directions:
Directions:
Cook rice in advance and chill. This is a good way to use up leftover rice.
Add sugar and vanilla. Fold in gently.
Add crushed pineapple.
Add miniature marshmallows, as much as you like.
Fold in Cool-Whip.
Let chill.
Garnish with maraschino cherries, if desired

Mom used to make this a lot when we lived in Minnesota and had company coming.

That's funny, I just thought of something I hadn't thought about in a long time. Whenever Mom or Dad found out someone was coming over they would yell out "Company's Coming"! Then you would hear ten echoes (one at a time) passing the word along "Company's Coming"! Sounds like something you would've heard in the old television show "F Troop".
