1 quart size Ziploc freezer bag (must be freezer),
2 eggs,
Variety of fillings available such as bacon bits, precooked sausage patties(chopped into pieces), ham, onion, green pepper, cheeses, hot peppers, tomatoes,mushrooms, or whatever you might have available.

Crack two eggs into small bowl or custard cup. Pour into ziploc bag with the help of teammate.
Knead the egg until yolk is broken and egg is slightly beaten. Add no more than 1 tsp. of any ingredient of your choice. Close the bag carefully removing air as you ziploc. Drop bag in boiling water with tongs and cook exactly 13 minutes. Use tongs to remove the bag, open and slide egg on to plate. You may add salsa, or an extra slice of American cheese on top if you like. Salt and pepper to taste.

I used this recipe for the first time last spring in my 6th grade class. I usually demonstrate the omelet the day before we make it. It has become a favorite for a breakfast lab. While the eggs are cooking, students make a Julius. I vary with orange, strawberry, or grape. I set the ingredients up as a buffet...they may select up to 1 tsp. of any ingredients they wish. I found that kids that don't necessarily enjoy eggs, will try this and usually like the end result. I use the Dutch Oven pan for the water in each kitchen and have this on when they come to class. Minimal cleanup and they can complete both recipes in 42 minute class period.
