1-1/2 cups all-purpose flour
1/2 cup white sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup shortening
1 egg
1/2 (10 ounce) jar raspberry preserves

Directions:
Directions:
Preheat the oven to 375 degrees F (190 degrees C). Grease a 8 X 8 inch baking pan.
In a large bowl, stir together the flour, sugar, baking powder, salt and cinnamon. Cut in the shortening until the mixture is coarse and crumbly. Stir in the egg. I use my gloved hands to mix it all together, it just seems easier. Press about half of the mixture into the bottom of the prepared pan. Spread the raspberry preserves over the crust then sprinkle with the remaining crumb mixture.
Bake for about 20 t0 25 minutes in the preheated oven, until lightly toasted. Careful not to overcook. Cool in the pan on a wire rack. Then cut into squares, enjoy!

Students like to choose what they make...so I let them choose what kind of jam their kitchen group would like to add. It's quick enough to get done in a 43 minute class. If it's at the beginning of the semester, they can mix the dry ingredients the day before and save on a tray in the refrigerator.
