Peanut Sauce:
1/4 C. peanut butter
2 Tbsp. honey
2 Tbsp. orange juice
1 tsp. soy sauce
1 tsp. fresh ginger grated

1 C. picante' sauce

Fettuccine:
8 oz. fettuccine, cooked al dente'
3 boneless chicken breast halves
1 Tbsp. vegetable oil
1/4 C. fresh cilantro, chopped
2 Tbsp. peanuts, chopped
1/4 C. red bell pepper thinly sliced

Directions:
Directions:
1. Combine picante' sauce and the peanut sauce ingredients in medium sauce pan. Cook over low heat until smooth. Remove, set aside.
2. Toss cooked fettuccine with 1/4 C. of the picante'' and peanut mixture. Place in serving bowl, set aside.
3. Cut chicken into 1" pieces. Heat oil in a large skillet and saute' chicken until brown and cooked through 4-6 min. Add remaining picante' and peanut mixture to chicken and stir well.
4. Arrange chicken mix on top of fettuccine
5. Sprinkle chicken with cilantro, peanuts and red pepper.
