1 15 oz. can salmon
1/4 c. salmon juice
1 egg
1 tsp. baking powder
1 tsp. lemon juice
1/2 c. flour

Directions:
Directions:
Drain the salmon and save the juice.  Break up salmon with fork and mix with egg.  Add flour and stir thoroughly until well mixed and thick.  In a measuring cup or glass, combine salmon juice with baking powder and stir until quite foamy.  If it does not foam, add lemon juice.  After it has foamed, pour into salmon mixture and mix well.  Drop by teaspoons into deep hot oil.  Salmonettes will float and cook; may be turned once, but cook very quickly.

This recipe is a favorite of Dick and Joyce Cheatham.  The Salmonettes are similar to Salmon Croquettes, but crispier and smaller portions.
