Bran Muffins Recipe

.2 c. boiling water
1 qt. buttermilk
2 cups 100% bran
4 cups All-Bran
1 tsp. salt
3 c. sugar
1 c. shortening
4 eggs
5 c. flour
5 tsp. soda

Directions:
Directions:
Pour water and buttermilk over brans and salt.
Cool to lukewarm
Cream sugar and shortening, add eggs one at a time-beating after each.
Stir into bran mixture.
Add flour and soda and stir until just enough to wet.

Store in the refrigerator & use as needed.
Will keep up to 6 weeks. or
Cook in muffin tins for 17-20 minutes.
Or in a microwave muffin dish and cook about-?-2 minutes.

This is Joyce's recipe. She cooks them all and freezes them for a quick snack.
I took a pitcher full of batter to school and cooked them in the microwave to serve for breakfast to my staff. They loved it!
A good, make ahead snack for after school!
