17 boiled potatoes
1 cube (8 T.) butter
2 tsp. sugar
2 tsp. salt
1 c. whipping cream
5 c. flour

Directions:
Directions:
Boil potatoes. Drain. Rice potatoes with ricer.

Mix together:
2 tsp. salt
2 tsp. sugar
Add to:
1 stick of melted butter
1 cup whipping cream

Add to hot, riced potatoes. Mix well and refrigerate overnight so that dough is really cold. Next day add 5 cups flour and mix together. Dough needs to stand and tighten for a few minutes. Refrigerate dough and only take out small amounts of dough at a time for frying.
Heat lefse griddle. Adjust temperature as needed.
With *cloth covered rolling pin, roll out serving size ball on floured, *towel covered, surface, until flat and shape is round. Transfer lefse to the lefse griddle. Lightly brown on each side then remove to a rack covered with a cloth. After each lefse is removed from the griddle place on cloth covered wire rack and cover lefse with cloth. Wipe griddle off with paper towel. Roll and fry next lefse. Add next finished lefse and cover with the top cloth until next lefse is ready to be placed on stack. This prevents lefse from drying out. Butter, sugar and roll lefse while still warm. Best served fresh and warm!

Elmer was an 80 year old gentleman I met at St. Andrew Lutheran Church in Vancouver, Washington, about 15 years ago. His wife of many years, had passed away he and was having a difficult time dealing with the loss. I was with Stephen's Ministry at the time and was trained to spend time with members who were going through a life crisis. Well, to make a long story short, this man taught me more than I could ever have imagined and I believe he was what I needed at a time when I was going through some difficult things, myself. Funny how life tends to work that way. God works in mysterious ways! Elmer went to be with his wife in heaven about 13 years ago. This is Elmer's Lefse Recipe...I miss you my friend.
