Ingredients: Cake:
1 cup oil
2 cups sugar
1 tsp. vanilla
1/4 tsp. almond flavoring
4 eggs
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
2 cups grated raw beets
1-8 1/2 oz. can crushed pineapple
1 cup coconut
Frosting:
1/4 cup hot water
1/2 cup butter
4 tsp. cherry jello
1 tsp. almond flavoring
3-4 cups powdered sugar

Directions:Cream together:
1 cup oil
2 cups sugar
1 tsp. vanilla
1/4 tsp. almond flavoring
4 eggs
Sift together and add to creamed mixture:
2 cups flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
Fold into above:
2 cups grated raw beets
1 8 1/2 oz can crushed pineapple
1 cup coconut
Bake in greased 9"x13" pan at 350º for 25-30 minutes.
Frosting:
1/4 cup hot water
1/2 cup butter
4 tsp. cherry jello
1 tsp. almond flavoring
3-4 cups powdered sugar |

Notes: "I got this recipe and knowing Mary didn't like beets, I gave her a piece without telling her the ingredients. She liked it. Then she in turn gotUncle Chester, who also did not like beets. He liked it, but it was a hoot to get one "up" on him"!!
