1/2 med. eggplant
1/2 c. butter
1/2 c. fine bread crumbs
1/4 tsp. salt
1 jar spaghetti sauce
1 Tbsp. dried oregano leaves
1 c. shredded mozzarella cheese

Directions:
Directions:
Preheat oven to 450º F. Spray baking sheet with oil. Peel eggplant. Cut eggplant into 1/2 in. slices. Melt butter in microwave for 20-25 sec.in a shallow glass bowl. Stir. In a separate bowl-whisk together bread crumbs and salt. Dip eggplant slices in butter, then in crumb mixture; place on baking sheet. Spoon spaghetti sauce over top. Sprinkle slices with oregano and cheese. Bake for 10-12mins. or until tender. Remove slices from baking sheet and serve immediately.
