Skewered Shrimp and Prosciutto Recipe

9 thin slices of prosciutto
3 dozen raw shrimp, shelled and deveined
black olives
18 thin lemon slices
1/3 cup finely chopped Italian parsley
two cloves of garlic finely chopped
ground Italian spices
crushed dried red pepper, to taste
6 tablespoons, or more, good-quality olive oil

1. Pre-seven to 350 degrees
2. Cut each slice of prosciutto lengthwise into halves and wrapped one piece of prosciutto around each of 18 shrimp.
3. Slide 2 olives onto one of 6 skewers. Slide a wrapped shrimp on to skewer. Wrap a lemon slice around a plain shrimp and slide on to skewer. Repeat, using two more prosciutto wrapped shrimp, and two more lemon wrapped shrimp. End with two more olives. Repeat with remaining skewers.
4. Lay each skewer on a piece of foil. Sprinkle with Parsley, chop garlic, ground Italian spices and red pepper to taste. Drizzle each skewer with a tablespoon or so of olive oil and sealed packet. Set on baking sheet.
5. Date for 10 minutes, or until shrimp or done. Do not over baked.
6. Serve on bed of orzo with sundried tomatoes.

Assemble the skewers ahead of time, and keep in the refrigerator until ready to cook. Easy to prepare and a great company dish.
