1/4 butter
1 lb asparagus, cut into 1" pieces
1 (8 oz.) package of sliced baby bella mushrooms
1 red bell pepper, chopped
1/2 C chopped green onion
10 large eggs, lightly beaten
1/4 chopped fresh basil
1 t salt
1/2 t ground black pepper

Directions:

Preheat oven to 325º.

In a 12-inch, iron skillet, melt butter. Add asparagus, mushrooms, bell pepper, and onion; cook 8-10 minutes, until tender. Remove from heat.

In a large bowl, whisk together eggs, basil, salt, and pepper. Add to asparagus mixture.

Bake, 20-25 minutes, or until set. Let stand 5 minutes; cut into wedges to serve.

This is a great meal if your on Atkins or the South Beach Diet. (Not the whole thing, of course.) Don't leave out the fresh basil, it really makes a difference. You can substitute the real butter for a lower fat substitute. Or you can add this as a side-dish with fish or chicken.
