4 large baking potatoes, baked
3 Tbsp. vegetable oil
1 Tbsp. Parmesan cheese
1/2 tsp. salt
1/4 tsp. garlic salt
1/4 tsp. paprika
1/8 tsp. pepper
8 slices bacon, cooked & crumbled (or bacon bits)
2 c grated cheddar cheese
1/2 c sour cream
4 green onions, sliced

Cut potatoes in half lengthwise; scoop out pulp and discard (or save for another dish) leaving 1/4-inch shell. Place on a greased baking sheet Combine oil, Parmesan cheese, salt and garlic powder. Bake at 475º for about 8 minutes and turn over. Bake for another 8 minutes then turn right side up. Sprinkle bacon and cheddar evenly inside the potato. Bake two minutes longer or until cheese is melted. Serve with a dollop of sour cream sprinkled with green onions.
