Dressing:

4 T. sugar
2 tsp salt
1 tsp pepper
1/2 cup oil
6 T red wine vinegar

romaine lettuce
mandarin oranges
green onions
1 cup almonds
1/2 cup sugar

Directions:
Directions:
Mix dressing ingredients and store in fridge to blend flavors.

Carmelize the almonds and the 1/2 cup sugar on the stovetop. Turn the stove on medium to medium high. Stirring all the time adding more almonds and sugar. Takes a few minutes to do, the sugar melts and turns brown, but don't burn it. Take off the heat and place on waxed paper. After the chunks are cooled, break into smaller pieces for the salad toppings. Can store this ahead of time in a baggie or tupperware.

Mix the lettuce, onion and oranges. Mix in the dressing and top with the carmelized almonds.
