1 - 8 oz Cream Cheese, softened
1/2 c. Powdered Sugar
2 tbsp. Amaretto, Light Rum or 1/2 tsp rum extract (mix with cream cheese)
1 c. Heavy Whipping Cream (or 8 oz Cool Whip)
1 pkg. (3 oz) lady fingers
1/2 c. cold prepared espresso or strong coffee
2 tbsp. Amaretto, Light Rum or 1/2 tsp rum extract (mix with coffee)
2 tsp. Baking Cocoa

Directions:
1) Mix prepared espresso or strong coffee with 2 tbsp. Amaretto, Light Rum or 1/2 tsp. rum extract. Set aside.
2) Beat cream cheese and powdered sugar in large bowl with electric mixer on medium speed until smooth. Beat in Amaretto or rum on low speed; set aside.
3) Beat whipping cream in chilled small bowl on high speed until stiff peaks form. Fold into cream cheese mixture.
4) Layer ladyfingers horizontally in ungreased 8x8 inch or round pan. Pan should be at least 1 1/2 inches deep. Drizzle 1/2 espresso mix over lady fingers. Spread 1/2 cream cheese mixture over lady fingers.
5) Arrange remaining lady fingers over cream cheese mixture. Drizzle with remaining espresso mix. Spread remaining cream cheese mixture.
6 ) Sift or sprinkle cocoa over top. Cover & refrigerate about 4 hours until filling is firm. Store covered in refrigerator.
