Packaged instant mashed potatoes (enough for 6 servings)
1 4-oz. carton whipped cream cheese
1 beaten egg
2 tbsp. finely chopped green onion
1 tbsp. finely snipped parsley
1 tbsp. butter or margarine

Directions:
Prepare potatoes using package directions, omitting butter. Add cheese; beat will. Stir in egg, onion, and parsley; blend well. Turn into well-greased 1-quart baking dish. Dot with butter. Dash with paprika. Bake in 400º oven for 30 minutes.
