2 medium onion, thinly sliced
1 cup of apricot preserves
1/2 cup packed dark brown sugar
1/2 cup bbq sauce
1/4 cup cider vinegar
2 Tablespoons Worcestershire Sauce
1/2 teaspoon red pepper flakes
1 boneless pork top loin roast or pork shoulder roast (about 4 pounds)
1/4 cup cold water
2 Tablespoons cornstarch
1 Tablespoon grated fresh ginger
1 teaspoon salt
1 teaspoon black pepper

Directions:
Directions:
Combine onions, preserves, brown sugar, bbq sauce, vinegar, Worcestershire sauce and pepper flakes in small bowl. Place pork roast in crock pot. Pour mixture over roast and cook on low 8-9 hours.

Transfer pork to cutting board, cool slightly. Shred pork with 2 forks. Let cooking liquid stand 5 minutes to allow fat to rise. Skim and discard fat.

Blend water, corn starch, ginger, salt and pepper until smooth. Whisk cornstarch mixture into cooking liquid. Cook, uncovered on high 15 to 30 minutes. Return pork to crock pot mix well and serve!
