1- 6 oz. package frozen crabmeat or 1- 6 oz. can crabmeat, drained and flaked
1 beaten egg
1/4 c. fine dry bread crumbs
2 tbsp. finely chopped green onion
2 tbsp. mayo or salad dressing
1 tbsp. snipped fresh parsley
2 tsp. Dijon-style mustard
2 tsp. snipped fresh thyme or 1/2 tsp. dried thyme
1/2 tsp. Worcestershire sauce
1/4 tsp. celery salt
2 tbsp. cornmeal
2 tbsp. fine dry bread crumbs
2 tbsp. cooking oil
lemon wedges (optional)
Tartar Sauce or Dijon-style mustard (optional)

Thaw crabmeat, if frozen; drain. In a medium mixing bowl combine the first 10 ingredients. Mix well. Shape mixture into four 1/2 in. thick patties.

Combine cornmeal and the 2 tbsp. bread crumbs. Coat patties with cornmeal mixture. In a large skillet heat oil. Add crab cakes. Cook over medium heat about 3 minutes on each side or till golden and heated through. Serve immediately with lemon wedges, tartar sauce or Dijon-style mustard.
