2 pkgs. frozen spinach cooked
3 tbsp. EVOO, separated
1 small onion
1/2 c. Italian bread crumbs
1/3 c. grated Parmigiano-Reggiano
1 egg
1/4 c. grated Nutmeg
Salt and pepper to taste

Directions:
In a skillet, sautee onion with 1 tbsp of EVOO for 5 minutes.

Add onion to bowl of cooked spinach. Add the remaining ingredients to the bowl and mix well.

Form patties with ingredients, place on skillet and cook 3 minutes on each side.
