1 3 pound chicken poached and shredded
1 onion chopped
2 4 oz cans diced mild green chilies
2 Tablespoons vegetable oil
1 12 oz can mild enchilada sauce
1 cup chicken broth
1 cup half and half
2 cups grated Monterey Jack cheese (8 oz)
18 corn Tortillas
1 cup grated sharp Chedder cheese (4oz)

Directions:
Directions:
Saute onion and green chiles in oil until onion is soft. Add cream, broth, Montery Jack cheese and enchilada sauce and stir until melted. Add chicken meat. Put a layer of tortillas in the bottom of a 3 qt casserole dish. 9 x 13 inch pans works well. Spoon some chicken mixture over the tortillas. Continue layers of Chicken mixture and tortillas. Top with Chedder cheese. Bake uncovered at 300 degrees until heated through, about 30 minutes. May be assembled ahead and frozen.
