10" flour tortillas
creamed spinach (top brand - do not use sour cream based)
finely chopped scallions
finely chopped tomato bits
2 - 3 finely chopped jalapeņos
1 - 2 artichokes
cheddar and Monterrey Jack cheese

Directions:
Directions:
Preheat oven to 350 degrees.
Boil artichokes and finely chop hearts.
Mix cheeses together.
Lightly fry tortilla until soft. Keep flat and unbubbled. Let dry.
Place really thin layer of creamed spinach on top of tortilla. Sprinkle scallions, tomato bits, jalapeņos and artichokes very lightly on top of tortilla. Cover with thin layer of cheese mixture.
Bake for 2 to 3 minutes or until cheese melts completely. Do not overcook or tortilla will become soggy.
