1 pkg. frozen chopped broccoli, thawed and drained (10 oz. pkg.)
1 cup sour cream
1 cup cottage cheese
½ cup bisquick baking mix
¼ cup margarine or butter melted
2 eggs
Tomato slices; thinly sliced
¼ cup Parmesan cheese

Directions:

Lightly grease an 8x8x2 square baking dish and spread the broccoli on bottom of pan.

Beat sour cream, cottage cheese, Bisquick, margarine and eggs with hand beater or mixer. Pour over broccoli. Place tomato slices on top and sprinkle Parmesan over the entire casserole.

Bake between 325 – 350 for approximately 30 minutes or until knife inserted halfway between the center comes out clean.

Cool about 8-10 minutes before serving to give it a chance to settle. It’s easier to cut.
