3 or 4 artichoke hearts, canned
a clove of garlic
large handful of fresh basil
splash of extra virgin olive oil
large handful of freshly grated parmesan or romano cheese
Salt & Pepper to taste
puff pastry, defrosted according to package directions
3-4 fresh, ripe tomatoes

Preheat oven to 400F

Combine artichoke hearts, garlic, basil, oil, cheese and salt and pepper in a food processor until a rough paste forms.

Roll out puff pastry, smear with basil-artichioke mixture, cover with sliced tomatoes, and drizzle with more oil.

Bake 20-25 minutes until hot and bubbly and pastry is puffed.
