1 small sweet yellow or white
1 or 2 jalapenos
Handfull of cilantro leaves
5 or 6 tomatoes
1 lime
Salt and pepper to taste
Your favorite corn chips

Directions:
Directions:
Peel and roughly chop the onion, core the jalapeno and roughly chop. Place onion and pepper into a food processor; pulse a few times. Add roughly chopped tomatoes and cilantro, pulse a few times until everything is chunky. Pour into a bowl, add the juice of the lime and salt and pepper to taste. To make ceviche, add some small coctail shrimp and a little more lime juice. Maybe some avocado slices on top! Scoop up with your chips and enjoy!
