6 hot italian sausages, cut into 1" bites (1/2 frozen cuts best)
1 cup cubed spanish onion
2-3 cut potatoes
2 cloves garlic sliced
1 cup diced green or red pepper
1 cup sliced mushrooms
1 can whole tomatoes - chopped
olive oil
pinch oregano
pinch of basil
pinch of crushed red pepper
fresh chopped parsley!

Directions:

Large Frying Pan - heat 2 tbsp olive oil
In this order, begin with the following:
Add garlic
Add sausage and potatoes, brown
Add peppers, mushrooms and onions
Add tomatoes
Add more olive oil
Add seasonings - pepper, basil, crushed pepper, oregano, top with fresh chopped parsley
Fry for 10 minutes
