Boneless chicken breast, skinned, split, and pounded thin (about 1-11/4 lb.)
Chili powder
Salt pepper
2 ounces Cheddar cheese, cut into slices
¼ cup sliced green olives- (I use much more)
¼ cup margarine, melted
¾ cup crushed corn chips
1 can (8 oz.) taco mix

Directions:
Directions:
Season one side of each chicken breast with chili powder, salt, and pepper. Place one stick of cheese on each breast. Sprinkle 1 tablespoon olives down center. Fold edges over to enclose filling. Secure with wooden toothpicks. Carefully roll in melted butter, and then crushed chips. Arrange seam-side up in a 2-inch square dish. Cover with wax paper. Cook 6-7 minutes at 350 degrees, or until chicken is done.

Turn chicken seam side down and rotate dish ¼ turn, halfway through cooking. Meanwhile, in a small bowl, heat taco sauce. (I use the McCormick taco mix in a package and just add it to some tomato sauce and water).

I’ve modified some and just put a layer of thin chicken that has been coated with chips, top with green olives and cheese, and then lay another thin layer of chicken. I don’t roll it or use a toothpick. That takes too much time.
