3 1/2 c. flour
3 c. sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
4 eggs
3/4 c. oil
2/3 c. water
15 oz. can of pumpkin
3/4 c. chopped pecans (optional)



Directions:
Directions:
Preheat oven to 350º. Stir together dry ingredients. Form a well in the center of the dry mixture. Into the well add oil, eggs, pumpkin and water. Stir together all ingredients. Add pecans, if desired. Coat 3 large bread pans with cooking spray. Divide the batter evenly into the bread pans. Bake for approximately 45 minutes (insert a toothpick into each loaf to check for doneness).
