2 3/4 cups flour
2 tsp cream of tartar
1 tsp baking soda
1 tsp salt
1 1/2 cups white sugar
2 sticks butter, softened at room temp
2 eggs
2 tsp vanilla extract (I used the full amount the first time and will cut it back to 1 tsp next time)
additional sugar for rolling in

Mix flour, cream of tarter, baking soda and salt in large bowl. Set aside. Beat butter, sugar and eggs in large bowl with electric mixer on medium speed until light and fluffy. Gradually beat in flour mixture on low speed until well mixed. Refrigerate for 2 hrs or until firm.

Shape dough into 1 inch balls. Roll in sugar to coat. Place 2 inches apart on ungreased baking sheets.

Bake in a preheated 400 degree oven 6-8 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks to cool completely.
