Ingredients: Strawberry Cake:
1 box white cake mix
1 3 oz. pak. strawberry instant jello
1 15 oz. pak. fr. strawberries, thawed and pureed
4 large eggs, beaten
1/2 c. veg. oil
1/4 c. water
Strawberry Cream Cheese Frosting:
1/4 c. butter, softened
1 8 oz. pak. cream cheese, softened
1 10 oz. pak. fr. strawberries, thawed & pureed
1/2 tsp. vanilla extract
7 c. confectioners sugar
several finely sliced fresh strawberries, optional

Directions:Preheat oven to 350º. Lightly grease round cake pans. I also have made this in 9" x 12" pan, making it like a sheet cake.
In a lg. bowl, combine cake mix and jello mix. Add pureed strawberries, eggs, oil and water. Beat at med. sped with electric mixer. Pour into prepared pans. Bake for 20 mins. or until a wooden toothpick stuck in middle of cake comes out clean.
Let cool for 10 mins. Remove from pans and cool completely on wire racks.
Frosting:
In a large bowl, beat butter and cream cheese at medium speed until creamy. Beat in 1/4 c. of the strawberry puree and the vanilla extract. Gradually add confectioners sugar, beating until smooth. Spread frosting between layers and on top and sides of cake. If you are letting stay in sheet pan, then just ice top.
Garnish with fresh slices of strawberries or a few whole strawberries, if you like.
Note: there will be more than 1/4 c. of the strawberry puree in the icing directions. So you will have some leftover. Just use that on top of ice cream or make smoothies with it. |
