Use Halibut, Medium sized Snapper, Bluefish, Trout, or Seabass

6 slices one-inch thick of fish
1 small onion
1/2 clove garlic
2 cups strained tomatoes
2 tablespoons butter
1 bay leaf
1/8 teaspoon cayenne pepper

Directions:
Directions:
Brown onion and garlic in butter. Add tomato juice, bayleaf and pepper. Allow mixture to come to a boil. Place fish slices in dish and season with salt.Pour tomato mixture over fish slices,. then cover and place in oven. Set temperature to 350". Bake 20 minutes per pound.
