2 large yellow (ripe) plantains
3 cups water
1 tablespoon butter
1 tablespoon vegetable oil
3 large eggs
parsley flakes to taste
salt/black pepper to taste

Directions:
Directions:
Cut each plantain diagonally into four pieces
Place plantain pieces in deep pot
Pour water over plantain and bring to boil
Cook on medium heat for 10 mins or till plantain is done
Remove from stove, drain water and remove skin from plantains.
In separate frying pan, heat oil and cook scramble eggs.
Place scrambled eggs and plantain on flat serving plate.
Sprinkle parsley flakes over eggs
salt and pepper to tastes
Put butter over hot plantains
