Vanilla Cream Pie Recipe

3/4 cup sugar
1/3 cup all-purpose flour or 3 T cornstarch
1/4 t. salt
2 cups milk
3 slightly beaten egg yolks
2 T butter or margarine
1 t vanilla

For Chocolate Cream Pie increasing sugar to 1 cup and chop two 1 ounce squares unsweetened chocolate, add with milk.

For Banana Cream Pie slice 3 bananas into cooled baked 9 inch shell and top with vanilla pie filling.

For Coconut Cream Pie add 1 cup flaked coconut to vanilla pie filling.

In saucepan combine sugar, flour or cornstarch and salt, gradually add 2 cups of milk, mixing well. Cook and stir over medium heat till mixture thickens and boils. Cook 2 minutes longer. Remove from heat. Stir small amount hot mixture into 3 beaten egg yolks and return to hot mixture, cook 2 minutes stirring constantly. Remove from heat. Add butter and vanilla. Pour into cooled baked 9-inch shell.
Spread Meringue atop pie and bake at 350 for 12 to 15 minutes or tilll meringue is golden.

Meringue
Beat 3 egg whites with 1/2 t vanilla and 1/4 t cream of tartar till soft peaks form. Gradually add 6 T sugar, beating till stiff peaks form and all sugar is dissolve. Spread atop pie, sealing to edge of pastry.
