1 cup chopped onions
1 tbsp. minced garlic
2 lbs. lean ground beef
1 lb. sweet or hot Italian sausage - remove from casings and chop.
2 cup red wine
3/ 28 oz. cans San Marzano Italian plum tomatoes
3 tbsp. tomato paste
+o- salt and pepper
2 lbs lasagne noodles

Large container ricotta cheese 1 egg yolk, 2or 3 leaves fresh basil shredded
2 cups grated mozzarella cheese
1 lb. mozzarella sliced
2 cups grated Parmesan cheese or Pecorino Romano

Heat the olive oil in a large saucepan over med. high heat. Add the onion and garlic until soft. Stir in the beef until well browned. Remove the beef from the pan, and add the sausage for a few minutes until browned, return the beef to the pan. Add the wine and cook for a few minutes. Stir in tomatoes, tomato paste, salt and pepper. *at this point, I always add 1 tbsp of sugar to help with the acidity from the tomatoes. Cover the pan, and simmer the sauce for about 2 to 3 hrs stirring occasionally.

Add the noodles to a large pot of boiling water with some olive oil and salt. Cook them until soft.

In the meantime, combine the egg yolk and the shredded basil with the ricotta.

Preheat oven to 350deg. F. Drain the noodles, dry them well.

For the 2 boxes or lbs. of lasagne, you may need two pans. In a lasagne pan, ladle a thin layer of the meat sauce. Some recipes don't like the sauce first, but I always do. Cover with noodles, then another layer of the meat sauce, ricotta, mozzarella and Parmesan cheese. Finish with a layer of sauce, sliced mozzarella and sprinkle the rest of the Parmesan. Bake uncovered for 40 minutes. BUT if you are preparing the lasagne earlier, cover the pan, and keep it at 200 deg. F in the oven. Remove from the oven allow a few minutes before cutting into squares and serving.

Leo’s first year in Loyola spent her birthday away from home.... but with savings from a job she had at school, she came home two weeks later for Thanksgiving and surprised us all that same evening she asked me if possible to have a lasagne before going back to school. Of course it was possible and we celebrated a “belated” birthday for her.
